You know what the best part about this watermelon gazpacho is? The only thing you have to turn on is the blender.
No heat required.
Which is becoming my new requirement for summer cooking.
If it requires a heat source other than a grill or a slow cooker, it’s gonna have to wait till October.
Or if it can’t wait, fine, I’ll cook/bake it before 9 a.m.
It’s darn hot here in Texas. And we live in a charming little house that as built in the 1920s (read: our AC doesn’t stand a chance). We love everything about all of it. But it’s hot.
So we’ve been doing a lot of grilled burgers and salmon. veggies on the grill. pulled chicken in the slow cooker. big beautiful salads. slaws. crudités (fancy word for raw veggies) with all the dips. and tacos out of pretty much everything (coming up next…), and this gazpacho on repeat.
Spending less time sweating in the kitchen. And more time outside, well, sweating.
Speaking of sweating…
Summer is the natural time our bodies want to let go of things and detox.
Sweating is one of the main ways we release toxins. And eating lots of fresh, raw, fruits and vegetables (like the ones in this watermelon gazpacho) only helps to further enhance that process.
Raw, fresh veggies and fruits are also cooling, as in they literally help to cool the body down. Just what we all need in mid July…

Behind the Scenes in the No Rules Nourishment Kitchen
When I first made this watermelon gazpacho I filmed myself in my kitchen making it because I wanted to show y’all how I like to pass the time meal prepping and cooking.
I like to turn on some tunes, dance and use veggies as a mic. I’m telling you, it turns a “have to” into a “want to”, transforms my mood on those days when I don’t feel like it, and relieves stress better than meditation… in fact, I’d even call it meditation!
So, if you ever wished you could be a fly on the wall in my kitchen, here ya go…
Watermelon Gazpacho
- 4 cups watermelon, cut into pieces
- 3 tomatoes, diced
- 1 cucumber, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2-3 green onions, chopped
- ½ jalapeño, seeded and diced
- juice of 1 lemon
- 1-2 tbsp EVOO
- ½ cup basil
- ½ tsp sea salt
- black pepper
- Optional garnishes:
- avocado, diced
- cilantro, chopped
- mango, diced
- cherry tomatoes, quartered or halved
- sprouts
- In a blender, put watermelon, jalapeño, lemon juice, EVOO, basil and about half of what you chopped of the following: tomatoes cucumber red bell pepper green onions. Blend until smooth.
- Transfer blended soup to a large bowl for either serving or storage. Add the rest of the chopped veggies and stir them in. Serve immediately or chill in fridge (store in airtight container).
- Optional: garnish with diced avocado, herbs, fruit, more tomatoes, sprouts... or anything else that sounds like fun to add on top.
