Ingredients:

  • sweet potato
  • salt and pepper to taste

Directions:

Oven:
Preheat oven to 350. Stab sweet potato with a fork in a few places on both sides and place on a baking sheet. Bake 30-45 minutes, until soft. To check to see if done, gently squeeze sides of potato, it will be soft to the touch. Remove from oven and cut in half, lengthwise. Mash with fork and sprinkle with salt and pepper.

Microwave:
Stab sweet potato with a fork in a few places on both sides and wrap in a paper towel. Microwave on high for five minutes. Squeeze gently to see if potato is soft. If not, continue cooking in two minute intervals, until potato is soft to the touch. Remove from mic and cut in half, lengthwise. Mash with fork and sprinkle with salt and pepper.
