Continuing in this unofficial series of what to cook with it’s too hot turn on the oven… I bring you these easiest ever pulled chicken tacos. And it’s hands down THE easiest… (OK, I know I’ve called other recipes the easiest, but really this takes it to a whole new level) recipe of all recipes… if you can even call it a recipe.
Maybe that’s why it’s taken me so long to post it here. It seems like nothin’. BUT that is precisely why it belongs here.
Recipes that don’t require you to pull out a “recipe” is my thing.
My goal for you: To have more things you can cook that come outta that little recipe box in your head.
More dishes you know by heart.
That you can throw together, whip up, be like, “oh this? It’s so easy! It’s just….”
Because THAT, my friend, is the secret behind cooking without the crazy.
And cooking sans crazy is the doorway to everything else.
If you can figure out a way to cook simple meals, that don’t require a lot of fuss (read: that random ingredient you don’t have that requires a trip to the store), that use minimal cookware and give you enough for leftovers…. you will win at LIFE.

That’s literally it.
Step 1: Put in the chicken, Step 2: Pour over the salsa….
A word on picking a salsa….
As always, read the label. You don’t want to see sugar (or any other word for it), oils like canola or soybean or vegetable, or any other weird additives you can’t pronounce. Many contain citric acid as a preservative. If you can find one that doesn’t even better!
Here’s the ingredient list of my favorite salsa to give you an idea of what you want to see… In a nut shell: minimal ingredients that you could potentially have in your own kitchen and would use to make salsa from scratch. That’s it. I also like that this one is non-GMO.
OK, now that we’ve got the salsa on top… Step 3: Cook for 4 hours.
Step 4: Shred chicken…
I take two forks and literally pull the chicken apart using both of them. The chicken should be very tender after cooking low and slow for hours so it will pull apart easily.
I should mention, I use a slow cooker here though this would work the same way in an InstantPot. I just don’t have one because I’m old school like that… I’m sure the same thing would happen in 20 minutes in one of those things. I don’t know why, but that just kinda weirds me out. I’m OK with waiting a bit…
The Easiest Pulled Chicken Tacos
- 1 jar salsa*
- 1-2 lbs chicken breast
- Place chicken breast in slow cooker and pour salsa over chicken to coat and cover. Set slow cooker to high for four hours. When done, shred chicken using two forks to pull apart. Chicken should be soft and shred easily.
- Put chicken in tacos, romaine leaves, or on top of your favorite veggies or salad.
- Store leftovers in airtight container in fridge, will keep for 3-4 days.
