Tomato Basil Fruit Salad

  • 1 pint cherry tomatoes, halved (see time saving tip below!)
  • 1 mango or large peach, diced
  • 2-3 plums, diced
  • ⅛ cup red onion, diced
  • basil, torn
  • ½ lemon, squeezed
  • 1 tbsp EVOO, drizzled
  • sea salt
  • black pepper
  1. Combine everything in a bowl, dress to taste and stir to mix well. Goes great on top of grilled salmon or chicken. Also makes a tasty dip with your fav tortilla chips.
  2. Note: This could be made with different fruits too, like peaches, apples or watermelon.
