I’m a big fan of fruit in salads, especially in the summer, and this beet and watermelon salad is so sweet and refreshing I swear you’ll almost forget you’re eating a salad.
This beet and watermelon salad is one I make a lot in the summer when watermelon is usually just hanging out in the fridge. It’s easy to throw together and goes great with chicken, salmon or any other type of fish you may like.
Simple recipes like this beet salad are what I try to share with you on a regular basis. That’s why I started this blog. It’s all about cooking and enjoying food that is simple, nutritious, beautiful, delicious.

Beet + Watermelon Salad
salad greens (red or green leaf lettuce, spinach, mixed spring greens, etc.)
watermelon, cut in cubes
roasted beets, cut in pieces
red onion, thinly sliced
fresh basil, torn
walnuts
lemon vinaigrette dressing
In a salad bowl, place torn salad greens. Top with watermelon, beets, red onion and walnuts. Toss with lemon vinaigrette dressing and serve.
